kimchi

🥬🌶️ From older Korean dimchae = steeped vegetable; the English word is a loan

The English word kimchi is borrowed straight from Korean, so you already know it. Only the first sound shifts: Korean writes it with g (gimchi), a soft unaspirated sound between g and k. Older form dimchae came from Chinese 沈菜, soaked vegetable.
