🏁 始 = begin; verb stem + hajimeru = start doing (hajime! = begin!)
Attach 始める to a verb stem: 食べ + 始める = start eating, 読み + 始める = start reading. It is the same hajime that a karate or judo referee shouts to begin a match, so the stem names the action and hajimeru switches it on.
