📖 英和 = 英 English (as in 英語) + 和 Japan (as in 和食) → English-to-Japanese
英 is short for 英国/英語, England and English. 和 is the old name for Japan, as in 和食 (Japanese food) and 和室 (Japanese room). The order gives the direction: 英和辞典 goes from English to Japanese, and 和英 goes the other way.
和 — grain 禾 (phonetic) + mouth 口
和 is a phono-semantic compound: 禾 (grain) gives the sound and 口 (mouth) hints at meaning, originally suggesting voices joining in agreement or song. From this it came to mean harmony, peace, and 'together with'. In Japanese it also became the native word for Japan itself.
