🗂️ 类别 = 类 kind + 别 to distinguish = the kinds you sort things into

类 means kind or type, and 别 means to separate or distinguish. Put them together and you get the categories you divide things into. Note lèibié reuses 别 (bié), the same sort-things-apart character seen in 区别 and 分别.

类 — rice 米 + big 大 + dog 犬
类 (traditional 類) originally combined 米 (rice/grains) with 犬 (dog), suggesting things grouped by similarity, possibly from sorting grains or comparing dogs of a kind. Over time it came to mean 'kind, type, category.' The simplified form keeps 米 over 大, dropping the dog.

别 — separate (knife 刂 + 另 phonetic/'other')
别 originally depicted using a knife (刂) to separate flesh from bone, giving the core sense of 'divide' or 'part from'. The left component 另 ('another, other') reinforces the idea of setting things apart and also hints at the sound. From 'separate' the meaning naturally extended to 'other, different' and to the adverb 'don't' (i.e. do otherwise).
